Egyptian Style Avo & Eggs on Toast

  1. Preheat the oven grill setting on high. Rub your pieces of toast with the reserved olive oil from the sun-dried tomatoes and sprinkle lightly with salt.
  2. Cook eggs to your liking. While your eggs are cooking, place the bread on a baking sheet and put under the grill for about 1 minute or until toasted to your liking. (Watch closely as toast can burn FAST.)
  3. Once the bread is toasted, remove from the oven and top with sliced sun-dried tomatoes and avocado. Drizzle the avocado with lemon and then sprinkle with dukkah.
  4. Add your eggs and season with salt and pepper. Crumble over some feta and chopped chives to garnish.
